Apple-walnut salad

Ingredients for 2 servings:

  • 1 apple
  • 1 fennel
  • 1 red onion
  • 100g walnuts
  • 6 sprigs of flat parsley
  • 50g arugula

For the dressing:

  • 1 lemon
  • 3 tbsp olive oil
  • 1 tsp coarse mustard
  • 1 tbsp honey
  • pepper and salt

Preparation

Remove the core from the apple and cut the flesh into cubes of about half a centimeter. Grate or slice the fennel as thinly as possible. Peel the red onion and cut into thin half rings. Coarsely chop the walnuts. Pick the leaves off the sprigs of parsley and coarsely chop them.

Mix the arugula with the apple, fennel, red onion, walnuts and parsley in a bowl. For the dressing, halve the lemon and squeeze out the juice. Mix in the olive oil, mustard, honey and salt and pepper to taste. Mix the dressing into the salad and serve immediately.
